Paleo double chocolate muffins & an anniversary surprise

My husband and I often have trouble finding time to hang out with one another because we have a two-year-old who doesn’t want to go to sleep before 10pm. It’s a fiasco and we’re so in love with him that we’re working with it but in the mean time, we have little down time together. Like 30 minutes a night. When one of us is usually shoveling dinner down our throat.

So, as a treat and in recognition of one of our two anniversaries that we acknowledge, I corked a bottle of red wine, got some salami, soft ripened sheep’s milk cheese, sourdough rye, and baked some garlic. Any second now he’ll come out of my son’s room and we’ll enjoy it together. Little moments of indulgence are a wonderful treat. Life is short, right?

I just ran across this recipe for chocolate paleo muffins and I want to try it. I bake non-paleo too but I have to admit, I do like the cleaner feeling after eating without processed sugar and wheat. I’ll also include my favorite paleo dessert recipe thus far — Chick pea peanut butter chocolate chip cookies. They are surprisingly delicious.
